This low calorie sweetener's sweetness can reach 90% of that of sucrose, and would not lead to dental caries or diabetes. Maltitol does not take part in Maillard reactions with amino acids under 200C, so it can be applied as a color protector in most food products. Maltitol can also be used as a surfactant in emulsification and water retainer for baked products.
